It was late at night. I happened to be awake and hungry. Go figure…I decided to check the lovely internet for recipes. Oh man. Please tell me I am not the only one who does this?
Anyway, while scrolling through Pinterest (while being super hungry), I came across a ton of mouth-watering pictures containing artistic and hearty bowls of porridge.
Let me say that in plain, mid-western speak. Dressed up oatmeal!
Note-mine does not look nearly as fancy as the real foodie people’s oatmeal…but I am happy with how it tasted!
I am wondering if this will be like the next Acai Bowl craze? It’s a bit cozier and slightly more humble than those yummy acai bowls…and I love that! Oatmeal is pretty darn cheap.
We eat basically the same breakfasts in our house. Eggs & Oatmeal…and ALL the variations of those. After being inspired by all the delicious looking pics, I decided to make my own version of a fancy oatmeal with what I had available in the house.
I have to admit it. Making the oatmeal look pretty before eating, DID make breakfast feel a teeny bit more luxurious! It was a perfect start to a chilly, damp and dreary spring morning. Yum!
Check out my easy recipe below…
1 serving Quick Oats
Cinnamon (just a sprinkle)
1/2 tsp. Stevia Blend (or honey/sugar/syrup)
1 Tbsp. Unsweetened Coconut Flakes
1 tsp. Chia Seeds
1 Tbsp. Pecan Halves
Make a basic bowl of oatmeal (I use water, oats and a microwave)!
Stir the Stevia blend or sweetener of your choice into the cooked oats. Sprinkle the banana with cinnamon. Caramelize the Banana in a heated pan that is also coated with Coconut Oil Spray. Add the Pecans into the pan with the banana. Once the bananas are caramelized, spread them on top of the oatmeal. Sprinkle the Coconut Flakes and Chia Seeds on top of the oatmeal. Eat up!
This was plenty sweet for me…but you could always drizzle another teaspoon of real maple syrup or honey on top of the oats!
